The Banyan Tree Club and Spa Seoul has refurbished its signature restaurant with a Michelin star chef to offer an urban green dining concept.

The property has appointed Kang Min-goo as the executive chef of "Festa by mingoo." Kang, 36, is the owner and chef of Mingles, a contemporary Korean fine dining restaurant with two Michelin stars, who has proven his exceptional expertise by introducing a new level of Korean cuisine.

"Festa by mingoo offers a familiar but sophisticated gourmet experience with its rustic European cuisine which is crafted with chef Kang's passion and creativity," the hotel's President Choi Jong-yoon said in a press conference, July 8, to mark its official opening at the hotel.

"The diverse and creative a la carte menu options created with seasonal ingredients offer an authentic taste which can be enjoyed at affordable prices in a relaxing atmosphere."

Kang said, "I want to introduce European casual dining that matches the restaurant's location."

The chef said he is dedicated to finding the best ingredients to deliver an authentic taste.

"A pleasant green dining experience focusing on genuine taste and the freshness of seasonal ingredients are a cornerstone of the plates at Festa by mingoo," he said.

One of the ingredient providers is Fritz Coffee, known for trading directly with farmers to obtain the world's best coffee beans.

For high-quality beans, the coffee company meets farmers from six countries in Latin America and Asia, according to Banyan Tree.

The main interior concept of the restaurant is urban green.

"The white toned interior with exotic objects and botanical highlights emulate the sophisticated style of a resort villa. From the moment you enter, the genuine and charming hospitality complete the essence of urban green dining," a Banyan Tree official said.
