The rise of lobsters as food is remarkable.

Until they became popular among New Yorkers and Bostonians in the mid-19th century, lobsters were a symbol of poverty. They were food for the working classes. They were also served to prison inmates and used as fish bait.

Right now, lobsters enjoy their reputation as one of the most coveted dishes in Europe and North America. Cooking is diverse, ranging from steamed lobsters to lobster roll. Lobster roll was chosen by the Huffington Post, an online news blog based in the United States, as one of 25 dishes you should eat in your life time last year.

For those who love lobsters in Korea, the Grand Hyatt Seoul's Paris Grill is presenting a lobster special.

The special began Wednesday and will run until April 4. A renowned chef, Marco Mehr, from Switzerland was invited for the occasion.

Chef Mehr presents three course meals which include Atlantic lobster tartar, herb sauteed lobster tail, baked lobster gratin, cognac scented lobster bisque and lobster claw tortellini, among others.

Single dishes are also available for those who want to try something quick. Wood oven roasted Atlantic lobster Thermidor will give diners a tender lobster taste obtained through slow cooking.

The butter taste of poached lobster is enhanced with orange beurre blanc sauce. Other dishes include steam, char-grilled and baked lobsters served with asparagus, cauliflower, Fava beans, baby carrots, spinach and garlic mashed potatoes.

The hotel said it's delighted to have collaboration with chef Mehr.

Mehr, a Swiss national, has had a long and recognized culinary career. He spent years in Myanmar, Thailand, Singapore and Dubai, enabling him to embrace Asian elements into his cooking style. He won the 2013 Swiss Culinary Cup, along with the Chefs Olympiad at Erfurt in Germany and the Culinary World Cup in Luxembourg.

"It is an honor to work at Grand Hyatt Seoul, which has a long hospitality history in Korea," Mehr said. "I want to deliver an authentic European culinary experience to our customers through my contemporary reinterpretations. I hope that my career experience and passion will positively enhance the quality of dining at the Paris Grill."

The cost of a course menu starts from 122,000 won. Single dishes cost between 17,000 to 77,000 won. For more information about the special and reservations, call (02) 797-1234.
